I, too, have never made crepes, but I'd love to try. I've been messing around with gluten-free recipes, so this would be great recipe to start with.

I am going to try this recipe--the couple of times I have made crepes the batter hasn't been right---I like that you can use it without having to let it "rest" for a couple of hours! glad the class went well :)

Your post brings back great memories, eating crepes on the street in Paris.

Your photos, as always, are fantastic!

I might have to get me a crepe maker.

I've been loving your blog posts.

Happy spring!

I can confirm that it came out delicious! It did take an extra 20 minutes to bake though, and I though I could've sworn my tin was 10 inches, it filled it right to the top and at peak rise, it was double the height of the tin! So it had a sort of overhanging lip, which I trimmed off. It came out just as flourless cakes tend to - dense and fudgy in the middle, and tasty all the way through! And it works brilliantly with the raspberry and lavender coulis I made, though the cream cheese frosting doesn't add as much as I'd hoped.

Awesome recipe! Got it baking in the oven right now, and I'm going to give it my own touch by topping it with cream cheese frosting rippled with raspberry and lavender coulis. Just one thing though - the recipe doesn't say when to add the flour! Only realised after I put it in, so it's a flourless cake now.
